My take on a traditional Sichuan Pao Cai (Pickle) jar featuring our favorite little friend, Pedrolino! The wide body and narrow opening help keep contents submerged in brine with no need for weights.
You rest the lid inside the moat at the top, and then pour water into the same moat. .This keeps oxygen and contaminants from going in while letting gas from the fermentation out. The lid can be used as a handheld bowl for sampling your pickles as they ferment. Perfect for making lacto-fermented pickles, saurkraut, kimchi. You can use the jar for storing onions, garlic, cookies, candies and other dry goods! No need to fill the moat with water.
Due to being handmade, please allow some variation in size, shape and finish from the one pictured.
Jars measure approximately 9” tall and 7” in diameter and holds about 2 quarts.
